Still in vacation mode and surely I got up later than I should have, leading me to experiment with my brunch. Last night’s Pinakbet; a couple beaten eggs with a pinch of salt and pepper; some spinach, slivered white onions and a few minutes on the pan resulted to this-Omelette Pinakbet. It was definitely way better than I thought it was going to be! A smorgasbord of flavours from the bitter melon, sweet and spicy longanisa, eggplant and the creaminess of the buttercup squash made this dish texturally interesting as well. A few dollops of regular cream cheese adds in some tanginess to complete the omelette. And of course I threw in some peanut butter banana bread. A total Filipino brunch! I might half awake but that was an oh so good way to stay my day.
